Eyas restaurant delivers experiential dining in Northamptonshire with a focus on nutrition, sustainability and flavour from Head Chef Russell Bateman. The Falcon team proudly work with local farmers, estate gamekeepers and nurseries, using produce that is grown, harvested, and reared from within the 10,500-acre Castle Ashby Estate.

Respecting the local landscape and the abundance it provides, acclaimed Head Chef Russell Bateman and his team work hand-in-hand with local farmers, estate gamekeepers and nurseries, wherever possible, to create menus that showcase sustainable produce that is grown, harvested and reared from within and around the 10,500 acre Castle Ashby.
